The Hedonist employs traditional methods of winemaking, through the use of open fermentation and a basket press.
Fermentation is usually completed in small oak barrels. This method is adopted to increase the overall complexity and integration of oak through the wine. The Hedonist wines adopt a minimalistic approach to winemaking, believing that good wines are “made in the vineyard.” Great care is taken in the estate grown biodynamic vineyard. The Winemaking Team A dynamic trio – the winemaking team consists of Walter Clappis, veteran winemaker of 31 vintages, daughter, Kimberly and her partner James Cooter. Walter’s experience and wisdom plus the energy and enthusiasm of the new generation has created the perfect balance in the winery. Walter Clappis has been making wine for 30 years and is considered one of Australia's most outstanding Winemakers, being the only Winemaker to have ever won the Dan Murphy Trophy three times. During the 20 years Walter owned Ingoldby Winery, he amassed a total of 37 trophies and 124 gold medals, including the highly prestigious Bushing King Award for the most outstanding red wine and most recently the 2009 Hedonist Shiraz was awarded Australia's best export wine of the year, winning the prestigious George Mackey Memorial Trophy. It was chosen from more than 14,500 wines by an expert panel. All the wines reflect a purity which is consistent with the Winemakers and their philosophies.
